CREAMY SHRIMP PASTA
Ingredients:

3/4 lb fettuccini pasta

1 lb large raw shrimp, peeled and deveined (21-25 ct)

1 Tbsp olive oil

1/2 onion finely chopped

2 Tbsp unsalted butter
-
4 garlic clove, minced
-
1/3 cup white wine, I used Chardonnay

2 cups heavy cream
-
1/3 cup shredded parmesan cheese
-
1/2 tsp salt
-
1/4 tsp black pepper, or to taste

1/4 tsp paprika

1 Tbsp Parsley finely chopped to garnish.
Instructions:

Bring a pot of water to a boil then add 1 tbsp salt before adding your pasta. Cook according to package instructions.

While the pasta is cooking, season your shrimp with 1/2tsp salt, 1/4tsp black pepper and 1/4tsp paprika.

Heat your oil in a non stick pan. Cook your prawns on both side for roughly about 1-2mins on each side or until it is no longer translucent. Avoid over cooking.

Remove shrimp from the pan and set aside.

In the same pan, cook your finely chopped onions and garlic until fragrant.

Stir in 1/3 cup of white wine and let it reduce to about half.

Add your 2 cups of heavy cream. Let it simmer.

To your sauce, gently combine your parmesan cheese and paprika. Add more salt to taste.

Stir in your drained pasta and shrimp to the sauce. Make sure that they are fully coated

Serve warm with Parmesan cheese and parsley on top.
