Simple Portuguese Rice

Ingredients:

2 cups of long grain rice

1 large onion

1 medium red bell pepper

1 cup mixed vegetable

1 stock cube

1/2tsp turmeric

1/2 table spoon cumin

1/2tsp chilli flakes

Salt to taste

2 tablespoon olive oil

Instructions:

Chop the onion and pepper into small pieces
Heat oil in a large non-stick pan.
Add onions and peppers and cook for a few minutes.
Add spice mixture and cook until fragrant. Be sure that the onion and peppers are fully coated.
Add the rice and stock cube.
Add the mixed vegetables
Add water and let simmer on medium heat (30mins or until the rice is cooked).
Avoid stirring too often.
Use a fork to fluff the rice

Serve with your favourite meat
